you can screen shot the screen of texts, and save it as a picture. hold the lock button and home button down together and it will take a picture of whatever is on your screen

I highly suggest using google voice. You can search your messages for words and the time/date logging of the messages is great.

Also since the servers handling the txts are outside of your control I would (like to) believe they might be less contested as evidence in court.

For ordinary flipphones, I use a webcam (logitech) to take a snapshot of a message. Not elegant but it works.

Deciphertools will do this
I've used it, works well, but you need a backup of the phone on the computer. It scans your itunes backups for data.

Depending on the venue, text messages msy or may not be admissible. Check ahead before you do all the work.

I used it to extract text messages and save the audio files of voice mail from my phone only.

It may not have been admissible, but when my X realized that all of the crazy sh1t she had been texting and all the voice mail messages were saved a couple of things happened

1. she got super pissed and then refused to cooperate (with the court even), this worked in my favor

2. She stopped texting and leaving voice mails, this was a god send for my piece of mind

It's been 3 1/2 years and I still hardly hear from her.
